Celebrating Hispanic Heritage Month and Mexico’s Independence Day, this one-night-only experience brings together three culinary talents with a shared passion for the traditions, ingredients and techniques that make Mexican cuisine so diverse. Set against Ceiba’s panoramic rooftop views, the evening will journey through distinctive regional flavors, from Chef Lopez’s Carne Apache Tostada and Lamb Birria to Chef Montelongo’s Taco Yucateco and signature Nogada de Pato.
Each course will be thoughtfully paired with selections from Ceiba’s award-winning wine list, curated by General Manager Rob Colomb, with a wine-pairing option available to further elevate the experience.
